My Opinion + my mother’s

So far my favorite recipe has been, the chocolate confetti squares. Another reason why it was my favorite is that it is really yummy! Chocolate and peanut butter go together so well, and with the marshmallows its even better. My family loved these so much and so did I, they were delicious, creamy and squishy (the marshmallows).I give this squares a 9/10.My least favorite recipe was the pie crust, because the dough wouldn’t roll properly. It tasted good though, it just didn’t look very good. Next time I think I’ll try adding potato starch to make it roll better. I give this recipe a 6/10, because it was very crumbly, and wouldn’t roll out like it was suppose to. A technique that I’ve been practicing is trying to get rid of all lumps in batter/dough, either with a spoon or my hands.(depending on what I’m making) I give myself a 4 on this, I am confident in it but sometimes when finished there are still some lumps.


My Mom’s Words:

Brenda has been a real trooper. She has found recipes on the Internet for rice flour. Although they have been tasty recipes, the textures of rice flour recipes are different then wheat flour ones. She ground the rice herself to make rice flour. She has used some additional ingredients to make it work better. She has not wanted to mix wheat flour in with the rice flour as yet because of the detrimental health features of eating it. She made the rice flour crust for a few pies from scratch. She filled them with homegrown granny smith apples, berries in them and criss cross pie top and others with a crisp topping. She has cooked apple crisp, glazed apples, peach crisp, pumpkin pie, ice cream sandwiches, stir fried vegetables. She has also made and decorated birthday cakes and chocolate chip cookies. She cooked a bun with an egg in it and some spices, made a frozen chocolate mousse and fruit smoothies, too. As well as taking fruit from its natural state to juice, washing and prepping it and preserving it in sealed canning jars. With our homegrown apples and grapes which she helped pick and care for. Brenda has also hard boiled eggs and made her own vegetable salad using spinach and other veggies. The marshmallow squares she described in her paragraph were delicious and enjoyed by all who ate them. We were all disappointed in how fast they were consumed. The pie crust she described was exactly like that. However it was good. She had to pat the crust into the tin instead of rolling it. Brenda is good at finding her own recipes online or in recipe books. She is willing to write a list of what she needs and to follow through with the preparation and cooking. She enjoys cooking and serving others. She likes to clean up. She analyzes her work well and she naturally seeks to improve it for next time. She cooks for her family at least once or twice a week. She saves a serving or two for her grandmother or makes special meals for her Grandmother at her house.
