Chocolate Confetti Squares

(By the way this recipe is from a cook book: Company’s Coming 150 Delicious Squares)

  • 1/4 cup of butter/margin
  • 1/2 cup of peanut butter
  • 1 cup of semi-sweet chocolate chips
  • 8 oz. of mini marshmallows

  1. Melt Peanut butter and butter in a large saucepan. Stir in the semi-sweet chocolate chips once the butter and peanut butter is melted. Mix the chocolate chips in until they are completely melted.
  2. Remove the saucepan from heat and set aside to cool, until you are able to hold your hand onto the bottom, but don’t leave it cool to long or it may start to harden.
  3. Add marshmallows into the mixture, until completely coated. Take a 9 x 9 in. pan, line with foil (makes it easier to remove the squares), poor the mixture in.
  4. Refrigerate, once solid cut into 36 squares, and enjoy.

My Grandma loved these and gobbled her’s up. My siblings love these so much, they don’t last more than a day in our fridge. These are also great for picnics.

Apple Pie Recipe

Apple Pie Steps

  • Apples
  • Cinnamon
  • Sugar (If using sour apples)
  • Pie crust (dough)

  1. Preheat oven to 425 degrees
  2. Pick your apples, and wash.
  3. Peel all of the apples.
  4. Cut apples into small pieces.
  5. Sprinkle cinnamon (and sugar) on top of the sliced apples, mix in with the apples so that the cinnamon and sugar is evenly distributed.
  6. Roll out your dough, place the dough in the pie pan and press evenly in. Cut any excess dough off that is hanging over the sides, with a knife.
  7. Place all of the apples into the pie pan.
  8. Roll out the rest of the dough and cover the top with it.
  9. Place into the oven, for about 50-60 minutes, until top is golden and apples are tender
  10. Check often, if edges get dark quickly place a strip of foil around the edge to avoid burning.
  11. Once done allow the pie to cool before you serve it, top with whip cream (if wanted), or any other topping you wish to use, and enjoy the taste.
This apple pie recipe was delicious! My grandma declared it taste better than any store bought apple pie she had ever had. Everyone else who ate this pie loved it.

Pie CRust

  • 3/4 cup of butter/margin, cubed
  • 1/4 cups of rice flour
  • 1 tbsp. ice water
  • 1/4 tsp. xanthan gum
  • 1/4 tsp. salt
  • 1 large egg, slightly beaten

  1. Measure all dry ingredients into a large mixing bowl, use large whisk to blend ingredients.
  2. Add cubed butter and blend until the mixture looks loose, dry crumbs. Add slightly beaten egg and beat until incorporated in the flour mixture. Add 1 tablespoon of ice water whisk until evenly mixed in with the other ingredients. If you can squish into a ball than don’t add anything, but if its to fry than add 1/4 tsp. more of ice water.
  3. Collect all of the dough and form into a ball, cover in wax paper and stick into the refrigerator, until ready to use.
  4. When ready, take out of the refrigerator and squish the dough into the bottom of the pie pan and up the sides.
  5. Preheat oven to 350 degrees.
  6. Prick the bottom of the crust with a fork so it doesn’t bubble.
  7. Once the oven is heated to the correct temperature place the pie crust inside and set a timer for approximately 15 minutes, or until golden.

I found that this recipe did not roll to well, so I will be trying to change the ingredients, so that it will roll out better. Once I make the perfect recipe for a pie crust I will share it here with you.

Foods and Nutrition

I will be baking and cooking different foods. I will share them with you on this page. Most of the recipes that require flour I will be using rice flour instead. I will be trying to find the best ways to use it, what to add and what to take away from the ingredients list. I look forward to seeing how the recipes turn out and trying to make them better.
